I’m sharing my family’s favorite homemade pizza dough recipe and directions for creating personal size pizzas!

Martha Stewart’s Quick Basic Dough Recipe is by far the most user-friendly dough recipe I’ve come across. I’ve modified the recipe slightly at the kneading stage. My dough is typically pretty sticky after the first proof, so it’s helpful to add an additional 1 cup to 2 cups of flour!

Basic Pizza Dough

Ingredients

  • 2 envelopes (1/4 ounce each) active dry yeast (not rapid-rise)
  • 1/4 cup extra-virgin olive oil, plus more for bowl and brushing
  • 4 cups unbleached all-purpose flour, plus an additional 1-2 cups for kneading
  • 2 tablespoons sugar
  • 2 tablespoons salt

Directions

  1. Pour 1 1/2 cups warm water into a large bowl. Sprinkle with yeast and let stand until foamy, about 5 minutes.
  2. Whisk sugar, oil, and salt into yeast mixture. Add flour and stir until a sticky dough forms.
  3. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap (we prefer to cover with our reusable silicone lid that automatically forms an airtight seal on any bowl) and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour.
  4. Turn out onto a lightly floured surface and gently knead 1 to 2  cups of flour into the dough.
  5. Dough can be stored in an oiled bowl covered with plastic in refrigerator up to 2 hours.
  6. Turn out dough on a floured surface and roll dough.

Our oldest daughter isn’t the most adventurous eater, so when it comes to pizza night, we make her a basic cheese option!

Personal Size Cheese Pizza

Ingredients

  • 1/4 of pizza dough recipe (from above)
  • 2 oz mozzarella cheese
  • 1/4 cup marinara sauce
  • Corn Meal (helps you to transfer the pizza to the stone with ease!)

Directions

  1. Place pizza stone in the oven. Pre-heat oven to 400 degrees
  2. Turn out dough onto a lightly floured surface and roll until 1/4 inch flat
  3. Sprinkle corn meal onto wooden cutting board
  4. Carefully pick up rolled out dough and place on prepared wooden cutting board
  5. Spoon on marinara sauce and then sprinkle on cheese
  6. Bake pizza for 15 minutes or until cheese is bubbly and the crust is golden brown

For the rest of the family, we like to try more adventurous personal pizza options! Here is a recipe from Cook Smarts, that has quickly become one of our favorites!

Pizza Bianca with Sausage and Broccoli Rabe

Ingredients

  • Pizza dough -remaining 3/4 of dough recipe (from above)
  • Flour, all-purpose – 2 Tbsp
  • Cheese, fresh mozzarella – 8 oz, thinly sliced
  • Broccoli rabe – 12 oz, chopped (also called rapini; sub kale)
  • Garlic – 4 cloves, chopped
  • Oil, olive – 1 Tbsp + 2 Tbsp
  • Italian sausage, loose and raw – 8 oz (choose mild or hot)
  • Italian seasoning – 1/2 tsp
  • Lemon juice – 2 tsp
  • Red pepper flakes (opt) – 1/2 tsp

Directions

  1. Saute sausage and broccoli rabe – Heat a skillet with first part of oil (portion for pizza) over medium heat. Add sausage and saute, breaking it apart, until cooked through, 6 to 8 minutes. Transfer to a paper towel-lined plate.
  2. To heated skillet, add broccoli rabe and saute until broccoli rabe is wilted and tender, 4 to 5 minutes more. Add to plate with cooked sausage.
  3. Using hands, stretch out pizza dough to cover sheet pan.
  4. Bake dough for 3 minutes without toppings. (This solo time in the oven gives the dough time to crisp up; if you put toppings on now, your crust may get soggy.)
  5. Remove pizza from oven. Brush the surface of the dough with garlic oil.
  6. Spread sausage and broccoli rabe over top of pizza. Top with cheese.
  7. Bake pizza until crust is golden brown and cheese is melted and bubbly, 8 to 12 minutes.
