Peanut Butter Baked Oatmeal

Peanut Butter Baked Oatmeal with Berry Compote is one of our favorite weekday breakfasts. Here’s the easy and delicious recipe:

Ingredients

Berry Compote

  • 3 cups frozen mixed berries
  • 1/4 cup juice from an orange

Directions

  1. Preheat oven to 350 degrees F. Grease a 8-inch square baking pan and set aside.
  2. In a small bowl mix together the quick cooking oats, baking powder, sea salt and ground cinnamon. Set aside.
  3. In a large bowl mix mashed banana and peanut butter together until combined.
  4. Add in the vanilla extract, maple syrup and egg. Mix until combined.
  5. Add milk and stir until combined.
  6. Mix dry ingredients into wet ingredients and combine thoroughly.
  7. Pour the mixture into the lightly greased baking pan and bake for 20 minutes (or until top is golden brown)
  8. While mixture bakes combine frozen mixed berries and juice from orange in a saucepan (our favorite Le Creuset saucepan has a lid that doubles as a skillet!)
  9. Bring mixture to a boil.
  10. Reduce heat to low and simmer until thickened.
